The Washed Light Roast is developed to preserve the inherent character of the Baarbara Estate with minimum interference. At this roast depth, fermentation notes remain intact, acidity is vibrant, and the natural brightness of the S795 varietal is allowed full expression.
The washed process — in which fruit is removed before drying — ensures clean separation of origin character from process influence. The result is a cup where the estate speaks clearly: altitude-driven acidity, delicate fruit, and a clean finish.
Roasted in small batches in-house between 195°C and 205°C. Calibrated through cupping before each release. For brewers who prefer clarity over complexity.
